“Your Head Will Be Spinning With Joy”

That’s what Michael Stern says will happen to you after a taste of the Rooster’s Beak, better known by the Spanish name pico de gallo.  Pico de gallo often refers to a fresh, chopped salsa but, in the Tucson area (and parts of Mexico), it also refers to a fresh fruit salad dressed with lime juice and salt and chiles, and it is this combination that receives the praises of Jane and Michael Stern, especially the version served in South Tucson at, where else, the restaurant called Pico de Gallo.  Great tongue or manta ray tacos on freshly made corn tortillas can be enjoyed, too.  This discussion recently took place with Lynne Rossetto Kasper on The Splendid Table.  The show is available online here (the Sterns’ segment begins at around 22:10 into the show – there is a direct link on the website but it connects to the wrong segment).

I heard this on Splendid Table and it sounded so good. I want to make it for Christmas dinner. I thought it would be a nice counterpoint to the roast beef and popovers.

What are the ingredients? Coconut, pineapple, jicama, and ??? And then you dress it with lime, salt and is it chili powder or cayenne pepper?
