I know, I know: half my reviews and Facebook postings lately have been hot-dog related. Call me dogmatic, but I am even fond of those that by any reasonable standards are inferior, whether convenience-store corn dogs or desiccated tube steaks that roll on metal dowels to stay warm. A Dines Farms dog, made in the Catskill Mountains of “all natural and pasture raised” meat, needs no excuses. As we had it at Pony Express, a little fast-foodery in Pleasantville, New York, adjacent to its big-brother serious restaurant, The Iron Horse, the Dines Farms wiener is firm and dense, so muscular that those who crave a typical hot dog’s oozy fattiness may be disappointed. Our examples, naked (above left) and topped with excellent relish and mustard, were accompanied by creamy sweet potato fries. (30 Wheeler Ave., Pleasantville, NY. 914-769-7669)
