Liver, Beets, Lima Beans, Brussels Sprouts, … You Can Cross Limas Off That List

Lima 1

Compile a list of the most disliked foods in America and it’s sure to include the ones listed above.  If you’re in agreement with that list, you can now cross off lima beans because Jane and Michael Stern have found limas that even self-professed lima-bean-haters are sure to love: lima bean supper, as served in Charleston, South Carolina’s soul food emporiums.  The beans are combined with bony and meaty pork parts for a huge, and hugely satisfying, low-cost dinner.  Jane and Michael appeared on Lynne Rossetto Kasper’s The Splendid Table to discuss lima bean dinner, and two choice places to dine on the dish: Ernie’s (Roadfood.com review) and Bertha’s Kitchen (Roadfood.com review).  That’s Ernie’s lima bean dinner pictured above.  You can listen to the Sterns’ segment here, or you can listen to the entire show if you’d prefer.

I love me some limas!!! The best I've had are the baked limas of the PA Dutch Amish eateries...I swear they'll turn any lima bean hater into a fan.

My mother loved Lima beans and were served frequently when I was growing up.  My father did not like them and they were one of the few "vegetables" we were not required to at least try.  To this day, I cannot eat them.  They seem more like a carbohydrate and a poor excuse, at that.  On the other hand, Brussels sprouts, beets, and liver I do like.

On a cold day there's nothing better than lima beans cooked with ham hocks till the meat falls off, served with fresh hard crust Italian bread with lots of butter.

I haven't had it in years but Jestine's used to serve a midweek special of stewed chicken and lima beans, and it was kind of a sweet/savory thing.  Delicious.

My grandchildren love what they call  "Gramma's Creamy Beans".   I cook  frozen lima beans very slowly for a couple of hours and add lots of butter and cream (or a little milk) and pepper.  I let them simmer a little longer and serve.  They eat every bit of them.

love brussels sprouts, like beets, dislike live except as a pate. sorry to say limas are poisonous.

I love them all except limas which, to me, have an unbearably chalky, bitter taste.  I've heard that some flavors, innocent to most, are unbearable to others due to genentic reasons (broccoli comes to mind, which I like.)  I have no problems with any other legumes, including favas, but limas are, to my taste, inedible.

Cooked dried lima beans with ham hocks or ham bone, eaten over rice, is to die for.  What a comfort food on a cold or wet day!!!  All of our family loves them and we have them often.
