A Cajun-Italian-Southern Cafeteria

Last weekend, Jane and Michael Stern appeared on Lynne Rossetto Kasper’s radio show called The Splendid Table to talk about Rocky and Carlo’s, a cafeteria in Chalmette, Louisiana that combines Cajun, Southern, and Italian cuisines into a soulful and hearty amalgam of local flavors.  Michael calls the gumbo (pictured above) the best anywhere, while Jane says the same thing about the mac and cheese, which can also be enjoyed topped with marinara sauce or brown gravy.  You can listen to Jane and Michael’s segment, or the whole show, online.  Be sure to also read the Roadfood.com review of Rocky and Carlo’s.

That gumbo could possibly put me in heaven.  Looks awesome.  The consistency looks perfect.

My wife and I love to visit Louisiana, both because of the food and the people who live there.  We have dined at Rocky and Carlo’s twice, and I must say that each experience was delightful.

I suspect that we would not likely drive through (or close to) Chalmette without yet another visit.

The mac and cheese at Rocky and Carlo's is the best I have ever had.
