Like peanut brittle but with bacon, this bacon brittle is just the tip of the iceberg for Brian Treitman, pitmaster at B.T.’s Smokehouse on Sturbridge Road (Route 20) in Brimfield, Massachusetts. Two varieties are available: mild and hot (above), flavored with red pepper flakes. The candy is very crunchy with chewy bacon chunks, like pork encased in syrup, and the unusual salty/sweet ratio is enough to keep you asking for more. Treitman smokes all bacon slabs himself, in addition to a full menu of BBQ: pulled pork, beef brisket, pork and beef ribs, and traditional sides of chunky potato salad, cole slaw with red onions, BBQ black beans, and cornbread. The photo below is the Pig Trip Platter, which included a half-rack of pork ribs, one huge beef rib, brisket, pulled pork, all the sides, and three homemade Southern-style sauces (mustard, tomato, and a lip-smacking tomato-vinegar). We hardly put a dent in it for lunch, and the leftovers provided us with three full meals at home! B.T.’s also has a second location on Main Street in Sturbridge.
