What's Your Favorite Cornmeal-Based Bread?

Good ol’ cornbread beat out hushpuppies as Roadfooders’ favorite cornmeal bread in the recent Roadfood.com poll.  Some of the choices may be unfamiliar to many people.  Jonnycakes are a New England (Rhode Island especially) version of cornmeal pancakes.  Corn pone refers to a Southern version of small cornmeal cakes.  The ringer is spoon bread, which is not a bread at all, but a cornmeal souffle.  If you’ve never tried it, find a recipe (it’s easy) and make some soon.  Your family will be grateful.

Home about corn pancakes -

follow the recipe on the side of a Jiffy Corn Muffin package for pancakes, BUT then add in about 1/3 cup of Niblets corn kernels.  

Fry the pancakes in a pan following cooking your bacon in the same pan.  Toast them up just fine on both sides, and serve with real maple syrup.  

Awesome way to start the day . . . and for some reason they taste better at about 1500 feet above sea level than at sea level, better cooked in the woods than at home.
