Favorite Potatoes

Roadfooders love French fries.  In last week’s Roadfood.com poll, they nosed ahead of mashed as the top Roadfood potatoes.  For all you French fry lovers out there, let us suggest a visit to Hot Doug’s in Chicago for their famous duck fat fries (Fridays and Saturdays only).  They have a deliriously savory quality to go with a wonderfully crisp exterior: the hallmarks of potatoes fried in animal fat.  See below:

Duck fat is the very best lipid for sautéing, roasting or frying any potato dish.

The Laurel Tavern in Studio City, CA also serves French fries that have been fried in duck fat.
