Memphis pitmasters are renowned for their expert ways with pork, but this time of year they also let birds into their pits, and their deep-fryers too. A & R Bar-B-Q (Roadfood.com review) is offering smoked turkeys for $40, if you order by Tuesday. The pit specialists at Cozy Corner (Roadfood.com review; photo above) are offering smoked turkeys for $65.55 (order by Friday). Some other Memphis restaurants will be marinating their turkeys (some in wing sauce, others in Cajun spices) and then deep-frying them.
