If I Had Just One More BBQ Meal, I'd Choose...

A recent poll of Roadfood.com readers resulted in pork ribs as the choice for a last barbecue meal (a prospect we’d hate to even consider).  Pork would seem to be the barbecue of choice in general as 71% chose pork in some form.  Pork does seem to translate pretty well across the country – you can find decent or better versions in lots of places.  Brisket is attempted in many places, too, but less successfully, in our opinion.  It’s really at its best in Texas.

Pork is what folks who don't know any better cook and call barbecue.  Barbecue is made from beef brisket, cooked for many hours by an old German somewhere in Texas.  Sauce is added to the meat only after it is cooked, if at all.  The meat is served on butcher paper.  Some folks use forks, most don't.
