Lard-Fried Chicken and Sauerkraut Balls

Jane and Michael Stern visited Lynne Rossetto Kasper on The Splendid Table this past weekend, where they discussed the unique Eastern European/American take on fried chicken available in the suburbs of Akron, OH.  Barberton fried chicken, as served at Belgrade Gardens (Roadfood.com review; photo above) and other places in the area, comes with “hot sauce,” which is actually a zesty, stewy tomato and rice dish (photo below).  Michael recommends beginning your meal with sauerkraut balls.  It’s too late to hear the show on radio, but you can still listen to their segment online, or the entire show if you’d like.
