Summertime Eats in CT, Chapter 28

Since Connecticut is considered the “buckle” in the Northeast's Pizza Belt, truly great pies are never too far away. Home to Eastern Connecticut State University, the town of Willimantic caters as much to its student population as it does to its year-round residents. Formerly the Plum Tomato, Fred's Brick Oven Cafe not only has spectacular wood-fired pizza, but they also offer oven-baked sandwiches. Popular choices include the Scottie Too Hottie (Buffalo chicken, tomato, onion, spinach, and gorgonzola), the Sweet Dibble (battered eggplant, homemade pesto, onion, red sauce, roasted garlic, and provolone), and many others, all available on their own freshly baked Fred Bread. Pizza is the spotlight, though, and a close-up of this beauty (above) reveals a fantastic combination of meatballs, hot cherry peppers, and caramelized onions. Notice the edge crust that's been charred by the burning logs in the heart of the brick oven, reminiscent of the coal-fired ovens of New Haven. To top it off, Fred's offers the full selection of Hosmer Mountain sodas, bottled in town for generations.

I went to Eastern from 2000-2005.  I always loved Plum Tomato, and loved it even more when it became Fred's Brick House.  The Original Bull, in both pizza and flatbread sandwich was almost always my number one choice.  It has grilled chicken, bacon, spinach, and a creamy garlic sauce.  They also make a great sirloin chilli, and garlic fries.  The wood fired wings also can't be beat.

I finally made it back there this summer when I went to the Mansfield Drive In.  Ordered a half a "Bull" flatbread and garlic fries.  The heartburn and indigestion were well worth it!

Mike, thanks for your comments!  Man, I'll have to try the Original Bull next time...and the wings...and the chili...but their pizza is so good that I'll have to get one to go, too.

BTW, this is the final weekend that Mansfield will be open this year, and I'm planning on going on Saturday for a double feature.  You can't beat $9 for two first-run movies!

To cut down on expenses... if you want. Get the original bull pizza.  They put the spinach and creamy garlic sauce on after it comes out of the oven.  We usually get take out, and bring it to the drive in with us.  They owners don't seem to care.  In fact when I was there we saw Pineapple Express.  When the old man saw all the food we had, he asked if we were hanging out with "the pineapple guys."  We weren't!
